Did you know there are four kinds of chocolate? Milk, dark, white, and ruby? Never heard of ruby chocolate? It’s a variety of chocolate that is made from ruby cacao beans, which can be found in Ecuador, Brazil, and the Ivory Coast. It features a sweet, berry flavor and a red-pink color, despite having no added colors or fruit flavorings.
Did you also know chocolate is self-stable and does not require refrigeration? Just keep it stored in an air-tight container away from light and other strong flavors and it will last you through all your baking needs (provided you don’t eat it first!).
