Did you know the concept of cooking chicken wings in hot sauce started in 1964 when the Anchor Bar in Buffalo, NY created the first-ever chicken wing? These “Buffalo wings” were a smash hit and other restaurants soon jumped on the bandwagon. In 1977 the city of Buffalo officially declared July 29th to be National Chicken Wing Day.

What makes a good chicken wing you might be wondering? To start with it has to have a high ratio of meat to skin, and the skin must be crisp (nobody likes a chewy wing). The final all-important last key is the sauce/seasoning. Some like heat. Others like sweet. Purists will say you have to go the classic route with hot sauce, butter, and a little vinegar. It’s really a personal preference, and you truly can’t go wrong. All that matters is you enjoy them and get sticky hands and a little sauce under your nails when you’re done.
