In honor of National Cooking Day (September 25th), Mary Ann from the Delmar office submitted this quick bread recipe that is soft, moist, and loaded with blueberries.

Blueberry Muffin Bread

Equipment

  • 1 Propane Oven

Ingredients
  

  • 3 cup Flour
  • 1 1/2 cup Sugar
  • 4 tsp Baking Powder
  • 1 tsp Salt
  • 2 large Eggs
  • 1/2 cup Oil
  • 1 cup Buttermilk
  • 3 tsp Vanilla
  • 2 cup Blueberries

Top Crumble

  • 1/2 cup Brown Sugar
  • 2 tsp Cinnamon
  • 2 tsp Sugar

Instructions
 

  • Preheat oven to 375 degrees.
  • Blend everything together at once until smooth and mixed about 2 minutes.
  • Fold in Blueberries.
  • Pour in 8x4 Pans
  • Sprinkle crumble mixture on top loaves before putting in the oven.
  • Bake for 45 minutes or until a toothpick comes out clean.
