Grilled Carrots With A Twist
Quick and easy, but a little different, recipe to celebrate International Carrot Day (April 4th) from Jeremy C. in our Senatobia MA office.
- 1 Propane Grill
- 2 lbs Carrots 12-16
- 1 1/2 tbsp Coconut Oil melted
- 1 tsp Cinnamon
- 1 tsp Chipolte Paste
- 1/2 tsp Chili Powder
- 1/4 tsp Salt
- Light grill over medium-high heat and let it come up to temp.
- Wash and peel carrots
- Mix together coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub mixture evenly all over carrots (using your hands is the easiest).
- Place on grill over indirect heat and grill for 20-25 minutes, flipping and rotating occasionally with tongs. Carrots should be slightly soft when you pinch them, but have a slight firmness towards the inside when done.
