Grilled Carrots With A Twist

Quick and easy, but a little different, recipe to celebrate International Carrot Day (April 4th) from Jeremy C. in our Senatobia MA office.

  • 1 Propane Grill


  • 2 lbs Carrots 12-16
  • 1 1/2 tbsp Coconut Oil melted
  • 1 tsp Cinnamon
  • 1 tsp Chipolte Paste
  • 1/2 tsp Chili Powder
  • 1/4 tsp Salt


  • Light grill over medium-high heat and let it come up to temp.
  • Wash and peel carrots
  • Mix together coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub mixture evenly all over carrots (using your hands is the easiest).
  • Place on grill over indirect heat and grill for 20-25 minutes, flipping and rotating occasionally with tongs.  Carrots should be slightly soft when you pinch them, but have a slight firmness towards the inside when done.
