Rotisserie Chicken Salad

This Rotisserie Chicken Salad is quick and simple thanks to using store bought rotisserie chicken on National Rotisserie Chicken Day (June 2). Thank you Rebecca M. of Fort Edward, NY for submitting.

  • 3 cups Rotisserie chicken shredded
  • 1/2 cup Mayonnaise
  • 1 stalk Celery
  • 1/2 medium Onion
  • 1 tbsp Parsley chopped
  • 1 tbsp Lemon juice
  • 1/2 tsp Salt
  • 1/2 medium Sweet apple chopped
  • 1/2 cup Walnuts chopped


  • Mix all the ingredients in a large bowl until combined. Then add the chicken.
  • Place in refrigerator overnight to settle.
  • Serve cold on farm bread or multi-grain bread with seeds for added flavor
