Grilled Carrots With A Twist
Quick and easy, but a little different, recipe to celebrate International Carrot Day (April 4th) from Jeremy C. in our Senatobia MA office.

- 2 lbs Carrots 12-16
- 1 1/2 tbsp Coconut Oil melted
- 1 tsp Cinnamon
- 1 tsp Chipolte Paste
- 1/2 tsp Chili Powder
- 1/4 tsp Salt
Light grill over medium-high heat and let it come up to temp.
Wash and peel carrots
Mix together coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub mixture evenly all over carrots (using your hands is the easiest).
Place on grill over indirect heat and grill for 20-25 minutes, flipping and rotating occasionally with tongs. Carrots should be slightly soft when you pinch them, but have a slight firmness towards the inside when done.
