Bryd's Sunday Football Nachos

In celebration of International Day of the Nacho (October 21st), Jeff H. from our Whippany NJ location submitted this recipe. It's perfect for feeding a group of friends who have gathered to watch football on Sunday, or any day.

Equipment

  • 1 Propane Oven

Ingredients
  

  • 1 lb. Ground beef
  • 1 medium Yellow onion
  • 3 cloves Garlic chopped
  • tbsp Olive oil
  • 4 tbsp. Taco seasoning
  • 16 oz Refried beans can or homemade
  • 1 bag Tortilla chips
  • 1 cup Jalapeno peppers pickled
  • 15 oz Black olives sliced
  • 4 medium Tomatoes diced
  • 2 cups Corn kernels
  • 4 cups Cheese of choice shredded

Instructions
 

  • Preheat oven to 425 degrees.
  • Heat olive oil in a large frying pan
  • Once oil is heated, cook onion and garlic until soft. Add meat and cook until meat is brown.
  • Add water to the pan, but don't cover meat. Add the taco seasoning and mix into the meat. Turn the heat to low, cover the meat, and simmer for about 15 minutes. 
  • Drain the meat. Put the pan back on the heat, add the refried beans, and heat through.
  • Layer the bottom of a baking dish with tortilla chips.
  • Cover with ½ the refried beans.
  • Cover with ½ the meat.
  • Lay on ½ black olives.
  • Lay on 1/2 the pickled jalapeno peppers.
  • Lay on ½ the diced tomatoes.
  • Lay on ½ the corn kernels.
  • Cover with ½ the cheese.
  • Repeat the steps to create two layers.
  • Put the baking dish in the oven and cook for about 15 minutes or until the cheese melts.
  • Put your favorite toppings on top (salsa, guacamole, sour cream, etc.).
